Wyoming Whiskey makes bourbon in small batches at our distillery in Kirby, Wyoming. From day one, every drop of Wyoming Whiskey was made in Kirby and aged in one of our six rick houses. That’s not true of every whiskey you run into. We don’t pass judgment, but it means a lot to us and we hope it means something to you. Double Cask Bourbon Whiskey Whiskey gets its color and character from the cask in which it ages and matures. This Double Cask whiskey goes through the process twice. The first five years of maturation in a new charred oak barrel make it a bourbon. That bourbon then experiences secondary maturation in decades-old casks seasoned by Pedro Ximenez sherry that adds a touch of sweetness and yields a smooth and impressively complex spirit. TASTING NOTES COLOR: copper to mahogany NOSE: autumnal notes of dried apricot, mission fig, and dried date PALATE: stewed prune and black raisin, with hints of candied orange peel; vanilla buttercream and toffee underneath MOUTHFEEL: rich, sticky cinnamon roll with raisins and spice FINISH: dark dried fruit, followed by warming brown baking spices

Great efforts to restore the main distillery building, cistern room, aging warehouses, and many other aspects of the grounds have left the property totally transformed, with more exciting developments in the works. From underground, spring-fed lakes, to the Kentucky split-face limestone exterior, to our old turn-of-the-century belt and pulley fan systems running throughout the distillery and visitor center, it truly makes for a memorable trip.
Bourbon was born right here in the heart of Kentucky. Steeped in charred oak barrels in the ideal climate of Kentucky’s hot summers and snowy winters; the tradition carries on today, almost entirely unchanged. In 2012, Steve Thompson, Chris Miller and Mike Loring came together with an idea to create a place for people to come and ‘bottle their dreams’ in the old Crestwood, Kentucky Ice Cream Distributors, Inc. building. Steve’s many years of experience in the spirits industry played a big role in the inspiration and power behind the Kentucky Artisan Distillery concept. It would be the first contract distillery in Kentucky, and the only production sized farm-to-bottle distillery capable of distilling as little as one barrel for a special occasion on up to over 1,800 barrels a year for partners like Jefferson’s Reserve. The story of Woodinville doesn’t begin with a 100-year-old recipe or generations of family distillers. It begins with two best friends and a dream. The dream is to make the greatest craft whiskey in the world by bringing the time-honored traditions of bourbon production into a craft environment — using the highest quality locally grown grains, the best barrels and coopers in the world, the most technologically advanced distilling equipment, and the mentorship of an industry icon, David Pickerell, former Master Distiller for Maker’s Mark. David Meier, the owner of Glenns Creek Distilling, has always had a love for where things are made, how they are made, and the level of craftsmanship that went into their making. This love of creation was one of the driving forces behind his career in manufacturing and yearning to create something of his own. He happened upon the Old Crow Distillery. Seeing the exorbitant level of craftsmanship that went into the old buildings and seeing the state that they were in after being abandoned for 30 years brought up a mix of sadness for the current state and intrigue for what it must have been like in its prime. David started to research the history of The Old Crow Distillery to get a better feel of what role the old distillery played in the bourbon industry and Kentucky. He recreated a new bourbon produced in the style of Dr. Crow; something that Dr. Crow would drink and approve of. Based in Rapid City, SD, owner Jerry Sailer, of Rapid City, has turned a seven-generation, Sailer family recipe into reality by producing flavored liqueur in South Dakota. Jerry Sailer was educated in the art of “making alcohol” by his father when he was 15 years old. Jerry’s father also learned the art of “making alcohol” when he was 15. In fact, the five previous father and son relationships of the family shared the same bond. Making alcohol has been in our blood for a long time. The flavors you’re tasting today didn’t happen overnight. Contraband flavored liqueurs have been perfected from generation to generation. In fact, Jerry recalls the beverage his father passed onto him as tasting like “turpentine with a little lighter fluid thrown in for flavoring,” but, “it got the job done.” From that point on, Jerry’s dream was to own and open his own distillery. ORIGINAL AND AUTHENTIC In 2008, Balcones was nothing more than an idea driven by a passion to create something original and authentic, right here in the Heart of Texas. It all started in an old welding shop under a bridge in Waco. For the next year, we replaced the roofing, knocked out walls, laid brick, cut pipes, installed copper pot stills from Portugal, and shoehorned a whisky distillery inside that quaint building. Proud of what we had accomplished on our own, we began distilling in 2009.

Split Rock Distillery for a dirt road we travel often—the shortcut between our two homes. It’s the only shortcut we’ve ever taken to bring you Maine’s first organic spirits. When we founded Split Rock, we promised ourselves we would handcraft our spirits the right way. That meant the long way: authentic, small-batch grain to glass, selling no spirit not our own. We spent evenings and weekends building a distillery and tasting room by hand in an old barn on historic Route One. We sourced organic grains and fruits from the fields of farmers we count as friends. We demanded organic sugars and drew waters so pure locals still harvest winter ice. Inspired by our city’s rich distilling history, Chattanooga Whiskey was founded in 2011 with a mission to bring back “Whiskey to the People.” Following the success of our community-powered Vote Whiskey campaign, we eventually became the first distillery in Chattanooga in over a century. In 2015, we began the patient process of crafting our malt-forward style of straight bourbon whiskey we call Tennessee High Malt. After 8 years in the making, our Tennessee High Malt was released in August 2019, marking a new era in our company history with a whiskey that celebrates the future as much as the history that got us here today. Opened in March 2015 and located in the heart of downtown Chattanooga, our Experimental Distillery is the first distillery to craft whiskey in Chattanooga in over 100 years. With over 100 different barrels maturing in the aging cellar, every visit to the Experimental Distillery is an exploration of the past, present and future of hand-crafted bourbon.
